Marco Pierre White’s ex-apprentice has been hailed as the ‘king of sarnies’ as he opens his very own restaurant on a popular Cornish beach.
Chef Ben Harrison has worked his way up from the bottom – learning his way round the kitchen under the celebrity chef.
Located on Newquay Beach, Stax combines his two passions: food and vinyl music.
The 30-year-old, from Chester, was inspired to launch his own place after growing tired of seeing local restaurants “only geared around tourism, with no passion to be seen.
“I want to make Stax and Counterculture known for its good, honest food,” Ben adds.
After working under Marco Pierre White, Ben went on to cook all over Europe as a private chef.
His sandwiches draw inspiration from his culinary journeys, road trips and adventures around the world.
Such as the ‘No Way Jose’ with pulled beef birria, Mexican slaw, salsa verde, nacho crunch, smoked cheese sauce and a pot of birria dipping sauce on the side.
One of Stax’s signature sandwiches includes a Cuban classic – stuffed with mojo pulled pork, flame torched Emmental cheese, gherkins and mustard mayo.
Other incredible items on sale include the ‘Mack Daddy’ – which is Stax’s take on a classic fish finger sandwich.
It features a generous amount of baked mackerel, caper mayo, straw potatoes, dressed rocket and sliced gherkins.
The restaurant has even added a spin on Kentucky Fried Chicken.
The FXXK KFC sandwich is jam-packed with confit fried chicken leg, garlic slaw, tomato, rocket, Monterey jack cheese and bacon jam.
According to Ben, the initial concept involved buying an old truck and turning it into the ’Sanger Banger’ by selling sandwiches by the beach.
But after purchasing the local joint Gustos, Stax became a permanent fixture.

They have already had customers rave about their menu online.
Securing the prime spot by the beach, Ben promises to deliver the finest and freshest ingredients to give his customers a taste of Newquay, France, Spain and beyond.
