Says Michael Caines, “These awards from the most prestigious wine competitions in the UK mean an immense amount to me and my team. From the very start, I believed in the potential to produce wines of the highest quality from grapes grown on our estate parkland. But this belief could only be achieved through hard, and work and dedication combined with the talent and expertise of our winemaking partner Lyme Bay Winery. I am immensely proud now to be able to serve my own award-winning wines in my restaurants at Lympstone Manor.”
In May 2018, Chef and owner Michael Caines planted 17,500 vines in the estate parkland with the aim to produce high-quality English wines utilising the varietals of Champagne, Pinot Noir, Chardonnay and Meunier. The Lympstone Manor Estate has since launched a Pinot Noir; Triassic, a provincial style field blend Rosé; Isabeau and a Classic Cuvée made in the traditional Champagne method.
To mark the hotel’s seventh birthday in April 2024 Lympstone Manor Estate launched a barrel-fermented Chardonnay as well as two spirits, a gin and an eau de vie de marc.
Lympstone Manor Estate Chardonnay is named “Edwards” as a tribute to Lympstone Manor’s longstanding Director of Operations and Vineyard Manager, Steve Edwards, who has worked alongside Caines for over 30 years. The launch of the Chardonnay marks the first still white wine to be produced from the hotel’s own vineyard, with each bottle representing the small and exclusive production numbered individually. The Chardonnay will age for a further year before release, with a small allocation being available in time for Christmas pre-order and registering your interest will be available on the Lympstone Manor Estate website soon
“The Spirit of Lympstone” eau de vie de marc, is distilled in partnership with Leigh Kearle, uses the grape pomace after pressing the Estate’s Pinot Noir, Meunier and Chardonnay grapes resulting in an aromatic spirit with floral and cinnamon notes and cherry fruit flavours. The gin, named “The Essence of the Spirit of Lympstone”, is crafted from the “Spirit of Lympstone” and is flavoured with a selection of botanicals including juniper, oris root, coriander, angelica root, and lemon verbena to make a classic style London Dry Gin.
The Lympstone Manor Estate collection of wines and spirits are all available to enjoy at Lympstone Manor Hotel bar and within its fine dining restaurant and Pool House casual dining restaurant. The full collection is also available to purchase on the dedicated Lympstone Manor Estate website. Vineyard tours are available to guests and visitors every Wednesday between May and September and include a vineyard visit, tasting and a delicious four-course lunch. In each room of the Hotel, guests can find a welcome tray of Lympstone Manor gin and Luscombe tonic to enjoy upon their arrival.
