- 200g Japonica rice
- 1kg ground beef
- 50g chopped fresh coriander
- 150g finely chopped red onion
- Salt and pepper, to taste
- 1/2 tsp ground cumin
- 2 eggs
- 50g olive oil
- 30g breadcrumbs
- 400g crushed cardamom pods
- 1kg fresh spinach, chopped
- Juice of three lemons
- 200g plain flour
- 200g chopped green onions
- Yogurt, for serving
Instructions:
- In a large bowl, mix ground beef, Japonica rice, red onion, eggs, breadcrumbs, cumin, coriander, salt, and pepper until well combined. Shape into small meatballs.
- Boil a large pot of water, add the meatballs, and simmer for about 25 minutes. Keep the broth aside.
- In a separate pan, heat olive oil and sauté the cardamom, spinach, flour, and green onions until aromatic.
- Gradually add the saved broth, blend until smooth, then add the meatballs.
