Keto Enchilada Quesadilla Recipe by chef George Duran Yield: 1 quesadilla
Pulled and chopped rotisserie chicken Enchilada sauce Olive oil Toufayan Bakeries Keto Wraps Grated Tex-Mex cheese Jarred or fresh jalapeños, thinly sliced Chopped cilantro Salsa, for serving
Mix pulled chicken and enchilada sauce in a bowl until fully coated. Set aside. Apply olive oil to both sides of the keto wrap using a brush or spray. Place on a nonstick pan or skillet over medium heat. Once one side is heated, flip and generously cover the wrap with grated cheese. Allow the cheese to melt and then distribute the chicken mixture, sliced jalapeños, and chopped cilantro on one half of the wrap. Fold the wrap over the ingredients and cook until the quesadilla is golden brown on both sides. Slice into three triangles and serve with salsa.

1/4 cup shredded mozzarella cheese
2 cooked sausage links (approximately 2 ounces each), cut into pieces

1 large egg
