The Elphinstone’s Loin of Tuna with a Guacamole Style Salad is a lovely, healthy, light dish perfect at a summer dinner or as a quick lunch when pushed for time.
Ingredients:
- Fresh Tuna Steak
- Avocado
- Tomato
- Red Onion
- Lime
- Chilli
Method:
- Take the tuna steak and season on both sides with a little salt and pepper and a rub of olive oil.
- Grill the fish on each side for 3 minutes.
- Slice the tomato, avocado and red onion and arrange the tomato in a circle on the plate with a little chilli on and then place the red onion and avocado on top.
- Finally add the tuna and finish with a squeeze of lime.
