A contemporary bar and butchery has become the latest addition to The Waverly Arches in Edinburgh. The thriving new leisure and retail quarter is located in a row of Victorian arches in the centre of the city’s Old Town. The £150 million development has transformed the heart of the Old Town, consisting of 19 newly renovated Victorian arches on East Market Street. The stunning C-listed brickwork arch is a perfect backdrop for Chop House Market Street, which offers a casual dining experience with a focus on ‘best of British’ steak and innovative cocktails.
New Waverly’s Project Director, Clive Wilding, said of the new venture: “This is yet another brilliant addition to The Arches which is now providing a genuine buzz around the city. The Arches provide something completely different, accommodating some of the most exciting new independent operators to be found anywhere in the UK.”
Chop House provides a 60 cover restaurant as well as a large bar area set over two floors. From the windows of the bar, breath-taking views of Edinburgh towards Calton Hill can be enjoyed. A cutting edge interior highlights the architectural details of the original brickwork, thanks to ground-breaking innovation by design agency Four-by-Two. A modern cocktail bar complete with intimate booth seating in nestled on the lower level, while upstairs hosts a stunning restaurant and kitchen area, with an open-flame charcoal grill as one of the major features.
