Gilltong is a sumptuous halfway house between jerky and biltong, but made with smoked salmon. The Pished Fish team take prime fillets of smoked salmon, hand slice them thickly before marinading in teriyaki, honey, Tabasco sauce and black pepper. After marinading the slices are air-dried until chewy, succulent and ‘head swimmingly’ tender. It’s sweet, salty, a little bit spicy and oh so addictive! Perfect for snacking contains no booze whatsoever yet curiously pairs rather wonderfully with pale ale
