Dale DeSimone has been appointed Executive Pastry Chef at Grosvenor House, A JW Marriott Hotel.
With 20 years of experience across hotels and restaurants in the USA, the UAE and London, Dale joined Grosvenor House from Sketch restaurant by Pierre Gagnaire, where he was Head Pastry Chef overseeing patisserie for The Parlour, Gallery Brasserie and Afternoon Tea, as well as the two Michelin star Lecture Room & Library.
Dale will lead a team of nine pastry chefs at Grosvenor House, the UK’s largest hotel catering operation with the Great Room hosting 300 events per year for up to 2000 guests at a time. Dale will also lead pastry across all Ballroom events, 86 Park Lane meetings and conferences, Executive Lounge, Afternoon Tea in the Park Room, JW Steakhouse, Park Lane Market and In Room Dining for 496 bedrooms and suites. Dale has already refreshed Grosvenor House’s signature Anna’s Afternoon Tea and created a Wimbledon Afternoon Tea which will be available for two weeks from 22 June.
Dale says, “The history, scale and prestige of Grosvenor House is incredible and it is a privilege to be appointed as Executive Pastry Chef. I am looking forward to bringing my experience, applying it to the intricacies of such a large hotel and exploring new and exciting opportunities for guests.”
Dale grew up in Philadelphia in the USA and worked in restaurants from his mid-teens. As interest in the kitchen developed, Dale enrolled in a small culinary school to train. Dale moved into pastry early in his career, enjoying the variety, creativity and precision involved, and has attended pastry schools around the world to hone his craft. Whilst enjoying all areas of pastry, Dale has a particular interest in chocolate. Hotel experience spans The Fairmont, Savoy, Ritz-Carlton and Four Seasons Hotels. In his spare time, Dale is a keen skier and enjoys photography.
