Apple Day is an annual celebration of apples and orchards, which first launched in London’s Covent Garden in 1990. One Gin Cobbler
A refreshingly fruity long drink that’s sure to lead to repeat orders.

INGREDIENTS
30ml One Sage Gin
1/4 fresh apple, cubed
4 sprigs lemon thyme, plus more to garnish
30ml white port
15ml elderflower cordial
20ml lemon juice
10ml Earl Grey tea syrup
2 orange slices
2 lemon slices
80ml ginger ale
METHOD
In a cocktail shaker, crush up the apple with 4 sprigs of the lemon thyme (regular thyme will do if you can’t find lemon thyme). Add the remaining ingredients, except the ginger ale, shake well with fresh ice and top with ginger ale. Garnish with thyme sprigs.

750ml good quality dry cider
150ml One Gin
50ml honey
2 x mulling spice bags (available from supermarkets)
Peel of 1 orange & 1 lemon (discarding the pith)
1 orange & 1 lemon sliced
METHOD
Add mulling spice bags, orange and lemon peel slices and cider to a saucepan and warm gently. Once hot, stir in honey, add One Gin and ladle into mugs to serve.
One Gin Apple Tart
This autumnal apple tart with a special gin twist is sure to impress when served at an afternoon tea or dinner party.
Ingredients
For the pastry:
200g plain white flour
2 tbsp unrefined golden caster sugar
100g unsalted butter (chilled and cubed)
1 large egg yolk
2 tbsp cold water
For the apple puree
3 apples (such as cox’s or golden delicious)
25g unsalted butter
1 tbsp cold water
2 tbsp unrefined golden caster sugar
For the filling
3 apples (such as cox’s or golden delicious)
1 tbsp lemon juice
15g unsalted butter
1 tbsp unrefined golden caster sugar
For the glaze
2 tbsp apricot jam
2 tbsp One Sage & Apple Gin
Sift the flour and sugar into a large mixing bowl. Using your fingertips, rub the butter into the flour until the mixture resembles fine breadcrumbs. Make a well in the centre of the flour mixture. Beat the egg yolk with 2 tbsp cold water and stir the flour until the mixture comes together. If the mixture is crumbly, add a drop more water to make a soft and pliable dough.
Roll the pastry, adding more flour if you need, until it is 3mm thick. Drape the pastry over the rolling pin and use to line the tart tin. Don’t trim the edges but leave about 1/2cm above the edge of the tin. Chill for half an hour in the fridge or freezer to help the pastry shrink less.
Preheat the oven to 170 degrees (gas mark 5). Line the pastry case with a circle of baking parchment and fill with baking beans then bake for 10 minutes. Remove from the oven, remove the baking beans and parchment then return the tart case into the oven for a further 5 minutes, until lightly golden and dry to the touch. At this point you can trim the pastry to make it neat. Turn the oven down to 160 degrees.
Fill a bowl with cold water and add the lemon juice. Peel, quarter and core the apples, placing them into the water to prevent them from browning.
Make the puree by chopping 3 apples into quarters and place in a medium plan with the butter, water and sugar. Bring to the boil, then cover and cook for 5 minutes until the apples are tender. Boil off any excess water so the mixture is quite dry, then mash the apples with a fork to make a puree. Spread this over the base of the tart case.
Cut the apples from the bowl of water into slices and arrange over the top of the puree. Melt the remaining butter in a pan and brush over the apples, then sprinkle with the remaining sugar. Bake for about 35 minutes, until the apples are golden brown at the edges.
Make the glaze by warming the apricot jam/conserve and the One Sage & Apple Gin in a pan. Remove the tart from the oven and gently pour the glaze over the tart.
