Nick Beardshaw is excited to announce the opening of his debut restaurant, Starling, which will launch at the end of August in his home town of Esher, Surrey. Having worked alongside Tom Kerridge for 14 years, Nick is excited to embark on his first solo venture and thankful as always for Tom’s support and guidance.
A 40 seater restaurant, Starling will bring Esher high street a taste of Britain’s best seasonal ingredients crafted into refined dishes which will be shared across a simple menu with no more than five dishes to choose from at each course. Classic flavour combinations will be enhanced using modern techniques to create a gourmet experience that is rooted in tradition, not fads.
Starling’s opening menu will celebrate Nick’s BBC Great British Menu success and include his winning fish starter ” A Moon Shaped Pool”, mains will include Creedy Carver duck, Cornish jumbo plaice and again, dessert will commemorate his Great British Menu achievements where “Balloon Girl” will feature, amongst two other choices. Himalayan salt aged steaks are available as a ribeye, fillet or sirloin (to share) to ensure that those just wanting the ever popular steak and chips option, can have it.
As expected from a restaurant of this standard, the wine list has been expertly crafted by James Shaw who joins Starling as General Manager from Restaurant Gordon Ramsay where he was assistant head sommelier. Compiled of ten reds and ten whites, half of which will be available by the glass, including sparkling wine from Sussex.
As well as table and chair dining, there will also be four counter seats available. Overlooking the kitchen and bar, these high chairs will be walk-ins only and encourage a convivial experience where diners will have the option to interact with the waiting staff and chefs throughout their lunch or dinner.
Designed by Eve Cullen-Cornes, the colour palette is inspired by the habitat of a starling; sun and sky – intermingled with woody tones enhanced via gold leaf touches and copper feature lights. Tables will be left uncovered to ensure an informal environment, whilst the window lined frontage will ensure plenty of light giving a feeling of space and comfort.
Starlings are known for their spectacular murmurations which are a celebration of togetherness and the strength of their community. It is also the ultimate example of teamwork and a true reflection of the best professional kitchens. No one knows this better than Nick, who along with his kitchen brigade, front of house and support of his wife, Rebecca, will come together to create restaurant Starling.
