Craft bakery, GAIL’s, plans to open in Clifton Village in May – its first venture in the south-west.
GAIL’s has grown out of a small craft chef-led bakery that has been serving top restaurants and food venues for the last 30 years. In 2005, GAIL’s opened its first neighbourhood bakery in London’s Hampstead Village. GAIL’s is known for its sourdough bread, sweet and savoury bakes, freshly made sandwiches and house-blend speciality coffee.
Tom Molnar, GAIL’s Co-Founder said: “Clifton is our first bakery in the south-west and I am happy we are a bit closer to some of my favourite growers, millers and food pioneers. The UK’s baking (and food) scene is getting increasingly better (and more exciting). Bristol’s progressive spirit and fortunate geography in the middle of some great agricultural land, with a long history of good producers, should continue to nurture and attract new ideas. The GAIL’s ‘spirit’ was first set by our rebellious-natured founder Gail Mejia, who felt so passionately about rethinking our relationship with food, for the better, and we work with similar-minded growers and producers to champion the quality ingredients that make this happen.
Since the very beginning, we’ve believed that we’re better off together so we can make positive impacts wherever we bake. Bringing our bakery to Bristol, a forward-thinking and thriving city, is something we’ve wanted to do for a while.”
GAIL’s works with several south-west producers, such as Shipton Mill flour, Quicke’s dairy and biodiversity champions, Wildpress.
Tom added: “We’re looking forward to having a small footprint in a place that we love and admire and are excited to welcome the Bristol community through the doors.”
GAIL’s Clifton Village will be open from 7am until 6pm daily, with the space being available for charities and community groups to use outside of these times. Visitors to GAIL’s can expect a plentiful range of baked and fresh goodies, including seasonal specialities such as Hot Cross Buns, Chicken, Tarragon & Ham Hand-Pies, Sour Cherry and Chocolate Scones and Crispy Squash & Sage Challah sandwiches.
