The Westin London City hotel, Hithe + Seek, is pleased to announce the second in its series of exclusive chef partnerships, with MasterChef: The Professionals contestant and Co-Founder of Palette Dining and Hash Hut London, James Sharp.
Celebrating bold and flavourful ingredients Hithe + Seek’s Head Chef, Fabio De Paolis, and James Sharp have combined their expertise, to create a menu that includes punchy, flavour-filled dishes, which will be available from Tuesday 7 May – Saturday 11 May.
James Sharp’s unique expertise lies in blending the sophistication of fine dining with the vibrant flavours and accessibility of street food. With a culinary background deeply rooted in both worlds, James has mastered the art of infusing haute cuisine techniques and ingredients into street food staples, creating an elevated yet approachable dining experience.
Fabio De Paolis brings a deep understanding of classic techniques, flavour combinations, and regional specialties to the collaboration. Fabio first joined the team at Hithe + Seek in 2021 having worked at The Mandarin Oriental, and previously been positioned in New York, Italy, Turkey and Malaysia. Fabio’s passion for celebrating the diversity and flavours from countries across the globe can be sensed throughout the menu. Combining the two chefs’ knowledge provides a strong foundation for experimentation and unique takes on dishes which this menu showcases.
Guests can look forward to indulging in a range of mouth-watering dishes that reflect the creativity and expertise of both chefs. Expect elevated Hash browns infused with brown butter and beef tartar. Seared Queen scallops and poached oysters, alongside Mini-Venison saddle wellington.
With each chef bringing their culinary background and skills to the table, Fabio de Paolis’ knowledge of ingredients, combined with James Sharp‘s expertise in fine dining and street food, will result in a diverse and tantalizing menu.
The eight-course menu is priced at £55 per person available between 16:00 – 21:00. The menu will run alongside Hithe + Seek’s usual menu from Tuesday 7 May – Saturday 11 May.

James Sharp comments “I am very excited to be partnering with Hithe + Seek and of course, Fabio to put this collaboration together. The menu is fun and funky and has a wicked mix of mega flavours and serious cooking along with a couple of unique twists.“ Menu highlights include:
- ‘Chickpea Panisse’- apricot harissa, charcoal roasted vegetables (VG) (GF)
- ‘Jalapeno & kaffir lime espuma‘- cured mackerel, sourdough croutons, charred Chinese chives, apple and pickled cucumber
- ‘Seared Queen scallop’– kabocha squash mash, XO sauce and crisped buckwheat
- ‘Poached oyster‘– fermented wild garlic, chive and dill oil, green chilli and puffed rice with fingerlime
- ‘Mini-Venison saddle wellington’ – corn-fed chicken breast duxelles, tarragon béarnaise
- ‘Brown butter hash brown’ – beef tartar, coal-oil emulsion, Lyonnaise onions and raw mushroom
- ‘Candied orange sponge’ – trifle Anglaise and negroni foam
- ‘Chocolate marshmallow’ – coffee pasty, chocolate cremieux and sesame
