Florence Lesage, an illustrious name in the pastry world, has an impressive portfolio. She began her career as Chef de Partie at the Château de Montvillargenne**** in Gouvieux and honed her skills at the prestigious Westin Paris-Vendôme Hotel**** under the guidance of Chef David Réal. Her accolades include being the Vice World Champion in pastry and confectionary and winning a silver medal at the World Skills competition in São Paulo in 2015. In 2022, she achieved the pinnacle of her career by becoming the World Champion of Confectionary Arts alongside Chef Alexis Beaufils.
Currently, Lesage is a consulting pastry chef and a partner of Andros Chef, and she has notably crafted the dessert menu for Christophe Hay’s restaurant Fleur de Loire**. Her diverse experience and artistic flair promise an enlightening and inspiring session for all attendees.
