Marrying two worlds of refined taste, the menu – featuring Caviar, fresh Jersey and Carlingford Oysters, Salmon, King Prawns, gourmet Mussels and more, has been carefully selected to pair perfectly with Della Vite Prosecco Rosé, and Della Vite Superiore. Della Vite captures the untold story of Prosecco’s heritage, craft and provenance, and is versatile enough to be part of any celebration – big or small.
Della Vite Valdobbiadene Prosecco Superiore D.O.C.G is rich and extra-dry with a highly mineral palate that lingers, characterised by hints of crostini and chamomile. The palate is clean and bright with a mix of gooseberry and date notes within small, creamy bubbles. The liquid is fermented for 60 days – normally Prosecco is fermented for 30 days – Della Vite doubles the length of this process for 60, making for a smoother liquid with a long finish.
Della Vite Valdobbiadene Prosecco Superiore D.O.C.G pairs perfectly with classic shellfish such as scallops, oysters, and mussels. Della Vite Prosecco’s bright, clean notes and creamy bubbles make it an ideal match for prawn cocktails or freshly shucked oysters, while its lasting mineral notes harmonise with shellfish and complement the richness of white fish dishes, adding elegance to any springtime celebration, especially when paired with caviar.
