A trio of new openings are being brought to Islington by co-founders Alex Young and George de Vos. The inaugural project from the duo will include wine bar & restaurant Goodbye Horses, the speciality coffee shop and garden Day Trip, and gelato shop The Dreamery, all set to open on Halliford Street across July and August 2024.
The wine bar and restaurant, Goodbye Horses, will open in mid-July. Located on the corner of Halliford Street and Elizabeth Avenue with 55 covers, the venue has been conceived in collaboration with renowned Swiss architect Leopold Banchini and Ltd Ltd. The kitchen will be in the hands of Head Chef Jack Coggins, known for his prior success at Papi, Planque, The Baring, and Hot 4 U, who will bring seasonality, sustainability, creativity and fun to a menu of sharing plates. Meanwhile, Wine Director Nathalie Nelles, who brings a wealth of experience from Noble Fine Liquor and Wright’s Wines, will curate the wine list, following the philosophy of going beyond just natural, celebrating producers that are at least organic, if not biodynamic, and where possible prioritising soil health. Food and drinks will all be served to a backdrop of vinyl albums selected from Goodbye Horses’ extensive 2,500-plus library and played via four vintage Tannoy Lancasters renovated by Izaak Gray.
Just ahead of the opening of Goodbye Horses, the speciality coffee bar Day Trip will open in early July. Located adjacent to the wine bar, within the same building, Day Trip will focus on the art of pour-over coffee. Helmed by barista and Head of Coffee Douglas Conde, it will offer a seated bar and an enchanting garden space. The garden is an extension of the coffee shop and wine bar designed in collaboration with esteemed garden designer and environmental artist Ji-hae Hwang, the recipient of multiple Chelsea Flower Show Gold Medals.
Completing the trio, the gelato shop The Dreamery will open in early August. Located opposite the wine bar & restaurant, with bar seats and standing space for 20, The Dreamery will serve a selection of unique gelato flavours made in-house by the Head Chef of Goodbye Horses, Jack.
